Cucumber, think about it during your pregnancy. Low in calories, it is also rich in vitamins including folate, essential during these nine months. Here is a salad recipe made for you.
For 4 people :
- 2 cucumbers
- 1 lemon
- pine nuts
- 8 sprigs of basil
- 5 cl of olive oil
- 2 tbsp. mustard
- salt and pepper
Wash the cucumbers and cut them into thin strips with a thrift. Place them in a colander with salt to make them drain for 30 minutes.
Wash the basil leaves, set aside 4 and chop the remaining leaves. Lightly crush the pine nuts.
Prepare the sauce by mixing mustard, chopped basil, lemon juice, olive oil, salt and pepper.
Pour on the slices of cucumbers and garnish with the reserved basil leaves and pieces of pine nuts.
